This Classic Sweet Potato Casserole recipe totally rocked! It was my all-time favorite out of all of my sweet potato recipes! Really, it is such a kid-friendly recipe, as well as an easy recipe to make even the kids can help. However, I recommend that an adult supervise. When I was about 8 or so, I added marshmallows on top of the sweet potato casserole. However, I emptied the entire bag of marshmallows on top. Oops! Then the next thing I know I hear this BOOM! And then I smelled this horrible smell…..the smell of burning marshmallows. My sister opened the oven door and the marshmallows had exploded all over the oven. The entire oven was covered with black burning marshmallows. We had left it in the oven too long. However, that mishap did not deter us. This Sweet Potato Casserole continued to be on our Thanksgiving table every year, year after year without any more marshmallow mishaps. It is still a favorite out of all of my sweet potato recipes! Thankfully, I learned from my childhood cooking mistakes and have successfully made this sweet potato casserole many many times over the years, as it has been served at many Thanksgiving dinners for decades, receiving rave reviews every time.
