- 1 cup whole-wheat or gluten-free panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon grated lemon zest
- ½ cup whole buttermilk
- 1 pound chicken breast cutlets (4 cutlets)
- ½ teaspoon salt
- ½ teaspoon ground pepper

Combine panko, Parmesan, oil and lemon zest in a shallow dish. Pour buttermilk into another shallow dish.

Preheat air fryer to 375°F for 5 minutes. Coat the basket with cooking spray. Sprinkle chicken with salt and pepper. Dredge in the buttermilk, letting excess run off. Dredge in the panko mixture, pressing to adhere. Place in the basket, in batches if necessary, and cook until golden brown and a thermometer inserted in the thickest part reaches 165°F, about 5 minutes on each side.

How do I store leftovers?
These can be stored in an airtight container in the refrigerator where they will keep for up to 3-4 days. They can also be frozen. Place in a freezer container and they will keep for up to 4 months. - chicken cutlets (or 2 chicken breasts sliced in half and evenly pounded to a ¼ inch thin)
- dried or fresh parsley
HOW TO MAKE AIR FRYER CHICKEN CUTLETS:
Create a breading station by placing 3 shallow plates or bowls together. Put the flour in one dish, a beaten egg in the next, and the breadcrumbs in another. Preheat the air fryer to 400F degrees.
In the dish with the bread crumbs whisk in the lemon pepper, garlic powder and parmesan cheese.
Lightly season the cutlets with additional salt and pepper. Using tongs, dredge the cutlet in the flour, then the egg, followed by the bread crumbs and set on a plate until all the cutlets are coated.
When the air fryer is hot, arrange the cutlets in a single layer in the basket.
Generously mist with olive oil spray.
Cook at 400F degrees for 5 minutes and flip. Spray again with more olive oil spray. Cook for an additional 4 minutes or until the cutlets reach an internal temperature of 165F degrees.
Serve immediately with fresh lemon wedges and garnish with fresh (or dried) parsley.
